Crispy Tofu and Avocado Noodles

This recipe was inspired by a green goddess salad that went viral on TikTok some time ago, I don't remember exactly when or who the creator was. It looked tasty, but I was thinking what if I could make it into a full, balanced meal and I came up with this recipe. This recipe has everything you need to feel full and satisfied: greens - spinach, plant-based protein - tofu, healthy fats - avocado, carbs - noodles.



Ingredients:

  • 360g firm tofu

  • 140g spaghetti

  • 1/4 cup flour

  • 2 tsp smoked paprika, garlic powder

  • salt & pepper to taste

  • 1-2 avocados, depending on the size and type

  • handful of baby spinach

  • optional: fresh parsley, lemon juice


Instructions:

  1. Cut the tofu into cubes, then in a mixing bowl coat them with flour and seasonings. Place the tofu cubes onto a parchment lined baking sheet, making sure that they are not touching each other. Bake for 20-25 minutes, flipping halfway through.

  2. While the tofu is baking, cook the noodles. Fill a large pot with water, cover with a lid, and bring to a boil. Once boiling, add a generous pinch of salt and cook the spaghetti according to package instructions. When your noodles are cooked, drain and rinse under cold water to stop the cooking process.

  3. In a mixing bowl, mash the avocado until smooth and creamy, season with salt & pepper.

  4. To assemble, mix the cooked noodles with the mashed avocado, until the noodles are all nice and coated. Add the baby spinach and mix again. Serve with as many of the crispy tofu cubes as desired and enjoy! If using, garnish with fresh parsley and lemon juice.
