Nourish Bowl In a Jar | Vegan Back To School Lunch

School just started here and even though, luckily, I don't go to school anymore, I thought I'd share some lunch ideas so you don't have to worry about it. I know it can be hard to figure out what to take with you to school or work, but I got you! This recipe is the perfect back to school lunch! You only need a few whole-food plant-based ingredients and about 30 minutes of your time to make this nourish bowl. It is healthy, balanced, super easy to make, delicious, and versatile.



Ingredients:

  • 1 cup long grain white rice

  • 2 sweet potatoes, thinly sliced

  • drizzle of neutral oil

  • 2 tsp smoked paprika

  • 2 tsp garlic powder

  • 230g smoked tofu

  • handful of cherry tomatoes, halved

  • handful of baby spinach


Instructions:

  1. Wash the rice at least 3 times or until the water runs clear. Add your washed rice to a saucepan and fill with water until it reaches your first knuckle. Cook the rice until all the water is absorbed, then cover with a lid and set aside.

  2. In the mean time, cut the sweet potatoes into roughly 1 cm thick circles. Drizzle with neutral oil and season with smoked paprika, garlic powder, salt and pepper.

  3. Transfer the sweet potatoes onto a parchment lined baking sheet and bake for 20 minutes, flipping halfway through.

  4. While the sweet potatoes are baking, cut up the smoked tofu into small cubes and halve the cherry tomatoes.

  5. To assemble, start by adding a layer of rice in the bottom of a mason jar, followed by some of the roasted sweet potato slices, baby spinach, smoked tofu cubes, and cherry tomatoes.



Notes:

Store in the fridge for up to 3 days or take with you to school or work.
