This Oyster Mushroom Sandwich is super easy and quick to make, flavorful, and comforting. If you're vegan and miss the texture of meat this is the perfect recipe for you! Oyster mushrooms, and a lot of other mushrooms in general, are great meat substitutes because they have a similar texture and can be used in lots different dishes. This sandwich is also great to take with you to work, school or a road trip.
Ingredients:
1 yellow onion, diced
3 garlic cloves, minced
2 tbsp tomato paste
3-4 oyster mushrooms
1 tbsp each smoked paprika, cumin, oregano
salt and pepper to taste
2 store-bought or homemade burger buns
vegan mayonnaise
Instructions:
In a pan sautee the onion and garlic for at least 5 minutes or until translucent and fragrant.
Next, add the seasonings and tomato paste. Cook for an additional 2-3 minutes or until the tomato paste is lightly brown.
Pull the oyster mushrooms into thin, long strips and add them to the pan. To help the mushrooms release some water, I recommend adding a pinch of salt.
Cook until the mushrooms have reduced and any water has cooked off, stirring frequently.
Cut the burger buns open and toast both halves.
Spread some vegan mayonnaise on both halves and add as much of the mushroom filling as desired, before closing the sandwich.
Serve warm and enjoy!
