These Spring Rolls are super easy to make, light but still filling, and delicious. The Peanut Sauce is what takes the Spring Rolls to another level. It goes perfectly with the crunchy veggies that are wrapped in rice paper. Spring Rolls are also super versatile, see notes for other filling ideas.
Ingredients:
1 medium size carrot, thinly sliced
1 red bell pepper, thinly sliced
100g smoked medium firm tofu,
15g smooth peanut butter
3 cloves of garlic, minced
juice of half a small lemon
2 tbsp agave or maple syrup
rice paper
Instructions:
Add some lukewarm warm to a shallow bowl. Dip your rice paper in the water, one at a time.
Start filling your spring rolls by adding some carrots, followed by some bell pepper slices, and the tofu.
Fold 2 sides of the rice paper in towards the center, like you would when folding a burrito. Then roll it up, starting from the side closest to you.
Repeat until you have used up all of the veggies and tofu.
To make the peanut sauce, add peanut butter to a small mixing bowl followed by garlic, lemon juice, and agave. Mix and add a bit of water to thin out the sauce. *
Dip the springs rolls on the peanut sauce and enjoy!
Notes:
* Only add a teaspoon of water at a time to the peanut sauce, until desired consistency is reached.
