Sometimes all you need is a simple dinner, but a simple and easy dinner doesn't have to mean a compromise in flavor, though. This Garlic Butter Gnocchi recipe is the perfect lazy lunch or dinner idea, because it is made with only 3 pantry staple ingredients, so it is quick and easy-to-make, but still full of flavor and not boring. I love to make this dish on days when I'm tired and I don't want to spend more than 30 minutes making dinner. If you are using store-bought gnocchi (just make sure to check the ingredients list, most of the time gnocchi is vegan), this Garlic Butter Gnocchi can be made in under 15 minutes.
Ingredients:
500g store-bought gnocchi
2 tbsp vegan butter
3 cloves of garlic, minced
Instructions:
Bring a large pot of water to boil. Once boiling add a generous pinch of salt and cook the gnocchi. When the gnocchi pieces start to float, you'll know they are cooked.
Meanwhile, melt the vegan butter in a pan. Using a slotted spoon, transfer the cooked gnocchi directly into the pan with the melted vegan butter.
Add the minced garlic and cook for 5-10 minutes, stirring occasionally, until the gnocchi pieces are crispy and lightly golden.
