Avocado and Chickpea Toastie | Quick and Easy

This Avocado and Chickpea Toastie is very easy and quick to make, perfect as an on-the-go breakfast or lunch! The chickpeas help make this toastie recipe more filling, since they are a great source of plant-based protein.



Ingredients:

  • 125g / 1 cup chickpeas, drained and rinsed

  • 1 whole avocado

  • 1-2 pieces of toast

  • salt & pepper to taste

  • 2 tsp garlic powder

  • chili flakes, optional

  • juice of half a small lemon


Instructions:

  1. Using a fork, mash the chickpeas in a mixing bowl, then add the avocado and mash again. I like to mash about 90% of the chickpeas, creating a different element of texture.

  2. Season with salt & pepper, garlic powder, chili flakes (if using), lemon juice and mix until well combined.

  3. Serve on toast and enjoy!
