This Avocado and Chickpea Toastie is very easy and quick to make, perfect as an on-the-go breakfast or lunch! The chickpeas help make this toastie recipe more filling, since they are a great source of plant-based protein.
Ingredients:
125g / 1 cup chickpeas, drained and rinsed
1 whole avocado
1-2 pieces of toast
salt & pepper to taste
2 tsp garlic powder
chili flakes, optional
juice of half a small lemon
Instructions:
Using a fork, mash the chickpeas in a mixing bowl, then add the avocado and mash again. I like to mash about 90% of the chickpeas, creating a different element of texture.
Season with salt & pepper, garlic powder, chili flakes (if using), lemon juice and mix until well combined.
Serve on toast and enjoy!
