Peanut Butter and Chocolate Cookies | Vegan

These Peanut Butter and Chocolate Cookies have the most amazing texture and flavor. Seriously so decadent, tasty, and easy to make. I mean you really can't go wrong with the combination of chocolate and peanut butter.



What ingredients do you need to make chocolate peanut butter cookies?

  • peanut butter - I used smooth peanut butter to make the cookies but you can also use crunchy peanut butter. However, keep in mind, if you use crunchy- instead of smooth peanut butter the texture of the cookies will turn out to be slightly different.

  • flour - All purpose flour is the best to use when making cookies.

  • sugar - Good old white cane sugar works perfectly.

  • cocoa powder - Of course the cookies wouldn't be complete without some chocolate, so we're using cocoa powder. I would recommend using unsweetened cocoa powder as the recipe already uses sugar and you don't want the cookies to be too sweet.

  • plant-based milk - Just a splash of your favorite unsweetened plant-based milk will help the cookie dough come together.



Storing and freezing

Store your cookies in an airtight container at room temperature for up to a week.

Freezing the cookies is a great way to always have some on hand whenever the craving hits. This way you can just bake one or two cookies at a time and don't have to make them from scratch. Follow the instructions listed below but don't bake the cookies before freezing! Form the cookie dough balls, then place them on a parchment lined baking sheet making sure they aren't touching each other. Once the cookies are fully frozen, transfer them into a container and place them back in the freezer until you are ready to bake them. Whenever you want to bake a cookie, just bake it for a few minutes longer than what the recipe calls for and enjoy!~

Variations:

To make these cookies more interesting and for a different textural element, you can add chopped nuts like almonds or peanuts, vegan chocolate chips or even dried fruits. Fold them in just before forming the cookie dough balls to avoid overmixing.


Allergic to peanuts? Don't worry you can still make these cookies! Just use the same amount of another nut or seed butter, like almond butter, instead. Keep in mind, however, the cookies will taste a bit different.


If you love peanut butter but maybe you are not a fan of chocolate, omit the cocoa powder and make plain peanut butter cookies. This is one of the reasons why this recipe is so great!

Ingredients:

  • 1/2 cup smooth peanut butter

  • 1 cup all purpose flour

  • 1/2 cup sugar

  • 2 heaping tbsp cocoa powder

  • 7g / 2 tsp baking soda

  • pinch of salt

  • 1/4 cup unsweetened plant-based milk of choice


Instructions:

  1. In a mixing bowl, mix together the peanut butter and sugar until well combined. Then add 2 tablespoons of plant-based milk and mix again to incorporate.

  2. In a separate mixing bowl, combine flour, pinch of salt, baking powder, cocoa powder.

  3. Add the dry ingredients to the peanut butter and sugar mixture and mix until just combined, adding a tablespoon of plant-based milk at a time as needed. A smooth and not sticky dough ball should form.

  4. Using your clean hands, form 10 even size cookie balls. Place the cookies onto a parchment lined baking sheet and slightly push each individual cookie down. The cookies won't spread much in the oven while baking.

  5. Preheat your oven to 190C and bake the cookies for 10-15 minutes! Let the cookies cool down completely before enjoying them with a cup of coffee or tea!
