Everyone loves chocolate chip cookies, right?! These Chocolate Stuffed Cookies, however, are even better. They're made without dairy and eggs but they are just as great as you're used to. I can guarantee that everyone who tries these cookies will love them. What's not to love about an already delicious, comforting cookie with gooey, melted chocolate on the inside?
Ingredients:
80g 50% dark chocolate
4 tbsp agave or maple syrup
Instructions:
Over a double boiler melt the dark chocolate and agave. To create a double boiler, you'll need a pot and a glass bowl. Add some water to the pot, making sure that when you put the bowl over it, the water doesn't touch the bottom of the bowl. When about 90% of the chocolate is melted, take it off the heat and continue stirring for 1-2 minutes.
Place the melted chocolate in the fridge while you prepare the cookie dough.
Make the cookie dough, following my recipe.
Using your clean hands, form a cookie dough ball, place it on a parchment lined baking sheet and slightly flatten it out making room for the filling. Then add about 2 tsp of the melted chocolate filling and cover with more cookie dough, making sure to cover the filling. Repeat with the rest of the cookie dough and filling.
Bake for 10-15 minutes. Let the cookies cool down for at least 10 minutes before enjoying them.
