These Peanut Butter Cookie Dough Balls are super easy and quick to make, packed with chocolate chips in every bite. They're the perfect travel-snack, but you can even take them with you to school or work.
Ingredients:
1/2 cup smooth runny peanut butter
2/3 cup rolled oats
4 tbsp agave or maple syrup
1/2 cup vegan chocolate chips
Instructions:
Blend your oats in a blender or food processor until a flour-like consistency forms.
In a mixing bowl, combine the peanut butter and agave or maple syrup.
Next, add the oat flour to the mixing bowl and mix until just about all of the flour is incorporated.
Then add the vegan chocolate chips and mix again until everything is well combined.
Refrigerate the dough for 15 minutes before forming 6 even size cookie dough balls, using your clean hands.
Notes:
Keep the cookie dough balls in the fridge for up to 3 days.
