These classic chocolate chip cookies are made without dairy or eggs, but they are just as delicious and very easy to make, using a few basic ingredients. They are moist, a bit chewy and soft on the inside and crispy on the outside. Honestly one of my all time favorite recipes I ever created. You could make this for your non-vegan friends or family and they wouldn't know it's vegan! Perfect with a warm cup of coffee or tea as a cozy morning treat.
Ingredients:
1/2 cup vegan margarine / butter, room temp
1 cup brown sugar
1 1/2 cup flour
2 tsp baking powder
pinch of salt
80 g chopped dark chocolate / chocolate chips
Instructions:
In a mixing bowl cream together the vegan butter / margarine with the brown sugar using a hand mixer or you can do it by hand too.
Next sift in the flour, baking powder and pinch of salt. Mix the dry ingredients with the sugar and butter mixture until the flour is almost all incorporated. (This is just to make sure you don't to overmix the dough. While folding in the chocolate, the rest of the flour will also get all nice and incorporated.)
Fold in the chopped dark chocolate or chocolate chips and form the cookie dough balls, using your clean hands.
Place them onto a parchment lined baking sheet and bake for 10 minutes.
Let the cookies cool completely before enjoying them!
