These Brownie Cookies are one of my favorites and, as I like to explain it, the baby of brownies and classic chocolate chip cookies. They are the best of both worlds! The cookies are moist and slightly chewy on the inside, not too sweet, and perfect with a cozy cup of coffee or tea.
Ingredients:
1 cup brown sugar
1/2 cup vegan butter
60g 50% dark chocolate
1 1/2 cup flour
2 tsp / 7g baking powder
4 tbsp cocoa powder
Instructions:
In a mixing bowl, cream together vegan butter and brown sugar.
In a separate mixing bowl, mix together the dry ingredients.
Over a double boiler, melt the dark chocolate. When the chocolate is about 90% melted, take it off the heat and continue stirring to fully melt the chocolate.
Add the melted chocolate to the bowl with the butter and brown sugar, mix until everything is well combined.
Add the dry ingredients and mix again until the flour is fully incorporated.
Using your clean hands, form 6-7 even size cookie dough balls and place them onto a parchment lined baking sheet.
Bake the cookie for 10-15 minutes.
Let them cool completely or for at least 10 minutes, before enjoying them.
