Pear Galette | Vegan

I love making and, of course, eating galettes because they're not only delicious, they're also versatile. You can fill a galette with just about anything. So depending on what is in season, you can use pears, apples, strawberries, etc. This Pear Galette is easier to make than you'd think, it's super tasty, and a fun way to eat pears. The cinnamon-spiced pears pair perfectly with the homemade, buttery, flaky crust in which they're wrapped! Plus the dough is vegan, I promise you wouldn't even know.


Galettes are all about being imperfect, you don't need any fancy tools or ingredients. You don't have to arrange the filling in a perfect-looking pattern and the edges don't have to be folded in a perfect cricle either. I think the rustic look of galettes is what makes them beautiful.


Let's get baking!







Ingredients:

dough:

  • 2 cups all purpose flour

  • 3 tbsp white sugar

  • 9 tbsp ice cold water

  • 93g cold vegan butter, cubed

filling:

  • 2 pears, thinly sliced (I used French butter pears but any other type should work)

  • 1/4 cup brown sugar

  • 1 tbsp cinnamon

  • 2 tbsp fresh lemon juice


Instructions:

  1. To make the dough, first combine the flour and sugar in a mixing bowl. Then add cold vegan butter. Using a pastry cutter, a fork cut the butter in the flour until a sand-like, crumbly texture forms.

  2. Next, start adding in the ice cold water 1-2 tbsp at a time. You might not need to use all the water, so just start by adding a few tablespoons at a time, adding more as needed. Knead the dough until it all comes together, incorporating all the flour. The dough should not be sticky.

  3. Place the dough ball in the fridge to chill for at least 20 minutes while you prepare the filling.

  4. To make the filling, add brown sugar, cinnamon, and lemon juice to a mixing bowl then add the thinly sliced pears and mix to coat.

  5. Take the chilled dough out is the fridge. Place it on a parchment lined baking sheet, then cover the dough with another piece of parchment paper. Roll it out into a roughly 20 cm diameter circle.

  6. Arrange the filling on top of the dough, leaving about a 2 cm border around the edge. Fold the edge in towards the center, repeating until all the edges are folded.

  7. Brush the folded edges with some plant-based milk or melted vegan butter. Bake for 25-30 minutes or until golden brown.

  8. Let the galette cool down completely before slicing. Serve with vegan ice cream, if desired and enjoy!
