One thing I love about galettes is that you can fill them with just about anything! Depending on what's in season, you can use apples, as I did in this recipe, strawberries, peaches, apricots the list goes on. The cinnamon-spiced apples pair perfectly with the homemade, buttery, flaky crust in which they're wrapped! Galettes are all about being imperfect, you don't need any fancy tools or ingredients. Have fun and trust the process, because I promise this Vegan Apple Galette tastes amazing and it will impress anyone who tries it.
This Vegan Apple Galette might sound intimidating and hard to make at first, especially looking at the long list of ingredients and steps. I thought the same when I first started working on the recipe, but quickly realized that it is actually easy, simple, and fun to make. You only need a few basic kitchen tools and ingredients you probably already have at home!
Ingredients: for the dough
2 cups all-purpose flour
3 tbsp granulated sugar
9 tbsp ice cold water
93g cold vegan butter
For the filling:
2-3 green apples, thinly sliced
1/4 cup brown sugar
2 tsp cinnamon
2 tbsp fresh lemon juice
Instructions:
To make the dough, add the flour and sugar to a mixing bowl, followed by the cold vegan butter. Using a pastry cutter, a fork, or even a food processor, cut the butter in the flour until a sand-like, crumbly texture forms.
Next, start adding in the ice cold water 1-2 tbsp at a time. You might not need to use all the water, so just start by adding a few tablespoons at a time, adding more as needed. Knead the dough until it all comes together, incorporating all the flour. The dough should not be sticky.
Place the dough ball in the fridge to chill for at least 15-20 minutes while you prepare the filling.
To make the filling, combine the thinly sliced apples with the brown sugar, cinnamon and lemon juice. Make sure the apple slices are evenly coated in the brown sugar mixture.
Take the chilled dough out is the fridge. Place it on some parchment paper, cover with another piece of parchment paper and roll it out into a 10 cm diameter circle.
Carefully transfer the dough over to a baking sheet. Arrange the filling on top of the dough, leaving about a 2 cm border around the edge. Fold the edge in towards the center, repeating until all the edges are folded.
Brush the folded edges with some plant-based milk or melted vegan butter. Bake for 25-30 minutes or until golden brown.
Let the galette cool completely before slicing. Serve with vegan ice cream, if desired and enjoy!
