Apple & Cinnamon Overnight Oats

I think oats are great, because you can make so many different versions of it. It's basically a canvas for all the toppings you want! This time I made Christmas inspired apple and cinnamon overnight oats. You can leave the oats to soak in the plant based milk overnight in the fridge and take it out in the morning for an easy but still yummy and festive breakfast. The apples are the star of the show and it only takes a couple of minutes to prepare in the morning.Of course you could also make the oats in the morning so it's nice and warm but I think having a ready to go breakfast especially on Christmas morning is helpful! You can make this delicious oatmeal even if you don't celebrate Christmas, no matter the occasion it's still yummy.



Ingredients:

  • 1 cup quick oat

  • 1 1/2 cup plant based milk of your choice

  • 4 tsp cinnamon

  • 1 tbsp chia seeds

  • 2 small or 1 medium size apple

  • 2 tbsp sugar

  • juice of half a small lemon

  • 2-3 tbsp smooth peanut butter (optional)

Instructions:

  1. In a bowl mix together the oats, plant based milk, chia seeds and 2 tsp of cinnamon. Place in the fridge and let it sit overnight or for 30-40 minutes.

  2. The next morning or once the oats have soaked up all the milk, cut up the apples into small pieces and add them to a pan over medium heat along with the lemon juice, the rest of the cinnamon and sugar. Cook until the sugar has nicely caramelized and the apples are soft, stirring occasionally. This should take you about 3-5 minutes.

  3. Top the oats with the apples and optionally with a drizzle of peanut butter.



Notes:

You could optionally mix in some plain plant based yogurt, before placing it in the fridge to soak overnight. This would result in a much creamier texture and I would recommend using 1 cup plant based milk and the rest 1/2 cup plain plant based yogurt.
