Parsnips are a great root vegetable and they can be prepared in many different ways, but I love roasting them. These Roasted Parsnips are easy to make, delicious, and perfect for a holiday dinner with your friends and family. Basically all you have to do is chop up the parsnips, season them, then just put them in the oven. They make for a tasty side dish or appetizer!
I feel like parsnips are a very underrated vegetable. You only see them on the dinner table during the holidays, but I think they deserved more attention. I love roasting parsnips like this, they make for a great side dish or a snack with your favorite dip. You could just serve them with hummus or my white bean dip.

It's no coincidence that parsnips and carrots look so alike. They're booth root veggies and belong in the family of celery and parsley.
Ingredients:
6 parsnips
1/4 cup nutritional yeast
1 tbsp garlic powder
1 tbsp Italian seasoning
salt and pepper to taste
drizzle of vegetable oil
Instructions:
Wash and peel the parsnips before cutting them into long, thick strips.
Transfer the parsnips onto a parchment lined baking sheet. Drizzle with oil, then add the seasonings and mix to coat.
Bake for 20-25 minutes, until lightly golden brown.
Serve warm and enjoy!
