This recipe is for my garlic lovers! I like to think of mashed potatoes as a plain canvas for any flavor profile you want. This Creamy Roasted Garlic Mashed Potato recipe is super easy to make, but it can still take any weeknight dinner to the next level. The roasted garlic adds a deep earthy flavor, which is one of the reasons why I love this mashed potato recipe.
Ingredients:
6-7 potatoes
1 head of garlic
salt & pepper to taste
2 heaping tbsp vegan butter
splash of unsweetened plant-based milk
Instructions:
Peel the potatoes an cut them into small cubes.
Fill a large pot with water, add the potato cubes to the pot and cook until fork-tender, about 20 minutes.
In the meantime, cut the top off of the head of garlic, drizzle with some oil and wrap in aluminum foil and roast for at least 30 minutes. The garlic should be soft and you should be able to squeeze it out.
Once the potatoes are cooked, drain the water and mash either with a potato masher or a fork.
Squeeze the roasted garlic out of its peel and mash with a fork, so it forms a paste-like consistency.
Add the roasted garlic to the potatoes, along with salt & pepper, vegan butter and unsweetened plant milk. Mix until everything is well combined and creamy.
Serve warm and enjoy!
