These Glazed Carrots might sound like something you would have with a fancy holiday dinner and while they can absolutely be part of a special dinner they can also bring any regular weeknight dinner to the next level! I personally think that side dishes are an essential part of any good meal, as they can really bring the meal all together. These carrots are the perfect side dish or appetizer for any dinner because they are super easy to make and take less than 30 minutes!
These Glazed Carrots are also meal prep friendly! You can boil the carrots ahead of time, make the glaze, and coat the carrots in it, then store in an airtight container in the fridge overnight. The next morning, or whenever you want to eat them, just transfer the carrots from the container onto a parchment lined baking sheet and broil for 10 minutes before serving! So easy and so delicious!
What ingredients do you need to make glazed carrots?
To make these Glazed Carrots you only need a few simple ingredients that you probably already have at home.
carrots
vegan butter
agave or maple syrup
smoked paprika and garlic powder
salt
optionally some fresh herbs
Ingredients:
14 carrots, cut in half and sliced lengthwise
1/4 cup vegan butter, melted
3 tbsp agave or maple syrup*
2 tsp smoked paprika
2 tsp garlic powder
pinch of salt
optional: fresh parsley or microgreens to garnish
Instructions:
Wash the carrots, then cut each one in half, slice the carrot halves lengthwise. I used organic carrots so I didn't peel them, but if yours aren't organic, I recommend peeling the carrots.
Fill a pot with a few centimeters of water, place a steaming basket over it and steam the carrots for 10 minutes, until fork-tender. Once cooked, drain the carrots and set aside.
In a frying pan, melt the vegan butter. Once melted, add agave or maple syrup and seasonings, along with the steamed carrots. Stir to coat.
Transfer the carrots onto a sheet pan lined with parchment paper. If there is any leftover glaze at the bottom of the pan, pour it on top of the carrots so nothing goes to waste. Spread the carrots out so they are in an even layer and not on top of each other.
Broil for about 10 minutes, until the carrots are nice and crispy and slightly golden.
Serve while still warm, garnish with microgreens or fresh parsley, if using, and enjoy!
Notes:
* Instead of agave or maple syrup you could also use brown sugar. I would recommend 2 tbsp of brown sugar.
