The holiday season can be hard for vegans, maybe you don't know what to make, sometimes you have to deal with the criticism of your friends and family regarding your lifestyle choices. Whether that's the case or not, this easy and delicious vegan Lentil Wellington is something vegans and non-vegans alike can enjoy together. It only requires a few simple ingredients and it won't take you all day to make!
What ingredients do you need to make this wellington?
store-bought puff pastry
onion
garlic
carrots
lentils
chopped tomatoes
tomato puree
walnuts
smoked paprika, ground cumin, dry herbs
salt and pepper
Ingredients:
store-bough puff pastry *
1 yellow onion, finely chopped
3-4 cloves of fresh garlic, minced
2-3 medium sized carrots, chopped into small cubes
260g can of brown lentils, rinsed and drained
400g can of chopped tomatoes
1 tbsp tomato puree
handful of chopped walnuts
2 tsp smoked paprika,
2 tsp ground cumin
2 tsp dry herbs
salt and pepper to taste
Instructions:
Sautee the onions and garlic in a pan over medium heat for about 5 minutes or until the onions are nice and translucent.
Add the chopped carrots, spices, and tomato puree to the pan. Cook for another 5 minutes or until the carrots have softened a bit and the tomato puree starts to brown, creating an extra layer of flavor.
Next, add the drained and rinsed lentils to the pan, along with the chopped tomatoes. Lower the heat and cook down the filling mixture, until it has reduced, stirring occasionally.
Let the filling cool down a bit, before adding the chopped walnuts.
Place your puff pastry directly onto a parchment lined baking sheet. Spoon your lentil filling onto the center of the puff pastry.
Cut the sides of the puff pastry into roughly 1 cm thick strips on angle. Fold the top and bottom bits over the filling first and then fold the strips too, making a pattern similar to a simple braid. (Once you see the pictures it'll make sense, it's not as hard as it might sound.)
Bake for 25-30 minutes or until the top is nice and golden brown.
Serve warm and enjoy!
