Classic garlic bread is great, but why not take it to another level by roasting the garlic first?! Roasting the garlic gives a richer depth of flavor to this Vegan Garlic Bread. Trust me, roasting the garlic is worth the time and effort because the end result is just so much tastier. Served with a simple, classic tomato pasta or even some soup, this Garlic Bread makes for the perfect, hearty dinner.
What ingredients do you need to make this Roasted Garlic Bread?

oil - to roast the garlic
vegan butter
bread
salt and pepper
fresh or dry parsley
red pepper flakes - it adds a bit of heat but if you don't like spice, feel free to skip this
For a cheesy vegan garlic bread:
I often make this recipe with lots of vegan cheese and let me tell you, you just can't go wrong with it! Follow the same instructions as listed below. About halfway through baking, take the garlic bread out of the oven and add a generous amount of grated vegan cheese on top. Then place it back in the oven and continue baking until the cheese is nice and melted and the bread is toasty. Vegan cheeses like shredded mozzarella, parmesan, or even some shredded vegan cheddar would work well.
What to serve this Vegan Garlic Bread with?
Pasta: Classic Vegan Spaghetti and 'Meatballs', Roasted Red Bell Pepper Pasta, Homemade Tomato and Red Lentil Spaghetti, Creamy Vegan Alfredo, or even this Hidden Veggies Pasta
Soups: Roasted Tomato Soup or Cozy Minestrone Soup; while this might not be how you would typically see garlic bread being served, it also goes great with this One-Pot Lasagne Soup
Dips: like 4-Ingredients Creamy White Bean Dip, or Hummus
Ingredients:
1 head of garlic
drizzle of oil
75g / 1/3 cup vegan butter, room temp
2-3 slices of bread
salt & pepper to taste
2 tsp fresh or dry parsley
red pepper flakes, optional
Instructions:
Cut the top off the head of garlic, exposing the garlic cloves. Drizzle with oil before wrapping it in aluminum foil. Bake at 180°C for 35-40 minutes or until the garlic cloves are super soft. The garlic should be soft and you should be able to squeeze the cloves out.
Let it cool down for a few minutes before squeezing the soft roasted garlic cloves out. On a chopping board or a plate, mash the roasted garlic cloves with a fork until smooth.
In a bowl, mix together mashed roasted garlic, vegan butter, and salt & pepper to taste.
Scoop half of the garlic butter mixture onto 1 piece of bread and spread it out evenly, using a butter knife. Repeat with the other slice of bread.
For a softer bread, bake for 5 minutes. For a crispier and more toasted bread bake for 10-12 minutes. Time may vary based on your bread of choice and size.
Garnish with fresh or dry parsley and if using red pepper flakes, if using. Serve warm and enjoy!
