Classic Vegan Spaghetti and Meatballs

Everyone loves a classic spaghetti and meatballs recipe, but this easy Vegan Spaghetti and Meatballs recipe is made from pantry staple whole-foods-plant-based ingredients. It is better for you, for the animals and for the planet, but still just as delicious, packed with flavor and it has textures you might already be familiar with. You can involve kids in the preparation of the lentil and mushroom 'meatballs' so they can learn something too, while making a comforting dish. Make this comforting and cozy Vegan Spaghetti and Meatballs recipe for your partner on Valentine's day or have a relaxing night in and treat yourself to a hearty meal (I choose the the second option).




Instructions:

  • 1/2 cup brown lentils

  • 8 white cremini mushrooms, cut into bite size pieces

  • 1 small yellow onion, diced

  • 1 tbsp each: garlic powder, smoked paprika, dry parsley, dry thyme, ground cumin

  • salt & pepper to taste

  • 1 tbsp ;low sodium soy sauce

  • 1 flax egg (1 tbsp ground flaxseeds + 3 tbsp water)

  • 1/3 cup breadcrumbs

  • 100g spaghetti

  • 200g store-bought marinara sauce

Instructions:

  1. Cook the lentils in veggie broth for extra flavor or use lentils from a can.

  2. In a pan over medium heat, cook down the mushrooms, onion and a pinch of salt. Let the mushrooms release the water and set aside once cooked and reduced in volume.

  3. Add the cooked lentils, mushroom and onion mixture to a mixing bowl, along with the seasonings, soy sauce, flax egg and bread crumbs. Mix until well combined. A not too wet, rough dough should form and it should stick together if you pinch it with your fingers.

  4. Using your clean hands, form 13 even size 'meatballs' and place them onto a lined baking sheet. Bake for 30-35 minutes.

  5. During the last 15 minutes of baking time, fill a large pot with water and bring it to a boil. Once boiling add the spaghetti and cook according to package instructions.

  6. Heat up the store-bought marinara sauce and add the cooked spaghetti and mix to coat the spaghetti in the sauce.

  7. Serve the spaghetti and tomato sauce with as many 'meatballs' on top as you would like and enjoy! Optionally top with some nutritional yeast!



Notes:

For extra depth of flavor add 2 tbsp of tomato puree to the cooked lentils and mushrooms mixture, before forming the 'meatballs'.
