Cozy Minestrone Soup

I don't know about you, but I'm not really a soup person. This minestrone soup however is like a warm hug in a bowl, which I'm sure all of us could use in this cold weather. It is a hearty, cozy, packed with veggies and tasty flavors. Perfect for a gloomy, cold day when you just want something quick and easy to make that is also healthy, filling and delicious. This recipe is also very customizable so you can add lentils, rice or other grains and veggies along with the other ingredients to make is even more tasty than it already is.



Ingredients:

  • 1 yellow onion, diced

  • 4 cloves of minced garlic

  • 3 medium carrots, sliced on an angle

  • 2 tbsp tomato paste

  • 400g can chopped tomatoes

  • 5 small potatoes, cubed

  • 1 cup pasta (elbow or other small pasta)

  • 3 cup veggie broth

  • 2 tsp each: oregano, thyme

  • salt and pepper to taste

  • 1 bay leaf

Instructions:

  1. In a large pot sauté the onion and garlic for 5 minutes or until nice and translucent. I recommend adding a pinch of salt at this stage to help sweat down the aromatics.

  2. Add in the carrots, potato cubes along with the seasonings and cook for another 3 minutes.

  3. Next add the tomato paste and cook until it has browned, creating a layer of flavor.

  4. Fill the pot with the can of chopped tomatoes and veggie broth, then cover the pot with a lid and let it come to a gentle boil. Cook until the carrots and potatoes start to soften but you don't want them fully cooked yet, because would be mushy by the time the pasta has cooked too.

  5. Once the potato cubes and carrots are almost cooked and the soup is boiling add the pasta and cook until everything has cooked through and the pasta is soft as well.

  6. Serve warm with a piece of toast and enjoy!
