Homemade hummus is honestly so easy-to-make, not to mention it tastes so much better than store-bought hummus and it is very cheap as well! You only need a few simple, pantry-staple ingredients for this recipe and you get a super creamy and fluffy hummus that you can use in so many different meals and dishes like buddha bowls or even with pasta, you can have it as a snack with your favorite veggies.
Ingredients:
1 cup dry chickpeas
3 cloves of garlic
1/4 cup good quality runny tahini
juice of half a small lemon
salt & pepper to taste
aquafaba *
Instructions:
Soak the chickpeas overnight. Drain the next morning, then transfer the soaked chickpeas into a large pot and fill with water. Cover the pot with a lid and cook the chickpeas until soft.
Add the cooked chickpeas to a food processor or high-power blender, along with the garlic cloves, tahini, lemon juice, salt & pepper and a few tablespoons of the aquafaba. Blend until smooth, stopping the scrape down the sides as needed. (don't add all the aquafaba at once, add a few tablespoons at a time as see if you need more as you go)
Serve as a dip with carrots or your favorite veggies or on toast.
