This vegan chocolate mousse is the perfect dessert that you can enjoy if you have a sweet tooth like me. It is very easy to make, using a few simple ingredients. This yummy mousse seriously feels like something you would get at a fancy restaurant, so creamy and smooth, it melts in your mouth, but you don't have to spend hours preparing it! You could easily make this to impress your friends and family.
Ingredients:
160 g aquafaba (liquid from a can of chickpeas)
5 tbsp white cane sugar / maple syrup or agave
40g 50% dark chocolate + extra 2 squares of chocolate shaved
1 tbsp refined coconut oil
Instructions:
In a mixing bowl whip up the aquafaba using a hand mixer. Gradually mix in the sugar and continue whisking until the aquafaba comes to a whisked egg white like consistency. Place it in the fridge while you melt the chocolate.
Make a double boiler and melt the dark chocolate and coconut oil. When the chocolate is all nice and melted, take the aquafaba and sugar mixture out of the fridge and carefully fold in the melted chocolate and coconut oil. Make sure to not mix it aggressively, just fold it in using a spatula until it's nicely incorporated. It's important that the aquafaba doesn't loose it's volume and texture.
Divide the mixture into 2 mugs, or whatever you are serving the mousse in and place it in the fridge for around 30 minutes.
When you are ready to enjoy it, top with the shaved chocolate!
Notes:
If you don't have a hand mixer, you can use a food processor's whisk attachment.
Mixing some instant coffee in would also be a great addition.
