Crispy Sweet Potato Balls

These sweet potato balls are the perfect appetizer for a more important occasion or just a chill weeknight dinner, as they are very easy to prepare and they are delicious as well. This recipe works well as a side with your dinner too. They are soft on the inside, crispy on the outside, flavorful and the chopped walnuts add a different texture which is what makes it not boring.


Ingredients:

  • 3 medium size orange flesh sweet potatoes

  • 3 heaping tbsp flour

  • 2 tsp each: garlic powder, smoked paprika, nutritional yeast, salt & pepper

  • handful of chopped walnuts

Instructions:

  1. Peel the sweet potatoes and cut them into cubes.

  2. In a large pot filled with water boil the sweet potato cubes until fork tender.

  3. Drain the water and transfer the sweet potato cubes into a mixing bowl. Mash them with a fork or potato masher.

  4. To a frying pan add a bit of oil and let it heat up while you combine the flour, seasoning and chopped walnuts with the mashed sweet potatoes.

  5. I recommend dipping your hands in a little bit of water when you start forming the balls so it doesn't stick. Form 11 even balls from the mashed sweet potato mixture.

  6. Carefully place them in the pan with the oil and fry for about 5 minutes on each side or until they are nice and golden brown.

  7. Place them on a plate with paper towel to soak the excess oil.

  8. Serve warm and enjoy!




Notes:

Depending on how moist your sweet potatoes are you might need to use more or less flour. It should be similar to a gnocchi dough consistency, but this recipe doesn't require as much flour.

Optionally you can roll the sweet potato balls in some bread crumbs before frying them.

If you don't want to fry them, baking works fine too. I would say bake them for around 25-30 minutes, flipping half way through.
