Chickpea 'Tuna' Sandwich

Chickpeas are amazing, because you can use them in so many different recipes. I already shared a couple of recipes using chickpeas. Today we are going to make a sandwich with chickpeas, vegan mayo, seasonings and lemon juice. This sandwich is healthy, filling since chickpeas are full of plant-based protein and a great breakfast option! The best thing about this recipe is that it is very customizable, you can use celery or even bell pepper to make the sandwich more colorful and packed with veggies.



Ingredients:

  • 1/4 cup cooked chickpeas

  • 2 tbsp vegan mayo

  • salt & pepper to taste

  • 2 tsp garlic powder

  • 1 tbsp nutritional yeast

  • 2 tbsp lemon juice

  • 2 pieces of toasted bread

Instructions:

  1. Mash the chickpeas with a fork. I like to mash about 90% of the chickpeas just for texture.

  2. Add the mayo, seasonings, lemon juice and mix well.

  3. Spread the chickpea mixture onto one slice of toast and close the sandwich with the other slice of toast.
