These Chocolate Filled Pancakes are super fluffy, filling, and delicious. But the star of the show is the gooey melted chocolate on the inside of the pancakes. The pancakes are made without dairy and eggs, but they're just as delicious.
Ingredients:
1 cup flour
4 tbsp white sugar
2 tsp baking powder
1/4 cup unsweetened plant-based milk
50% dark chocolate
agave or maple syrup, optional
Instructions:
In a mixing bowl, combine flour, sugar, and baking powder. Then add the plant-based milk and mix until well combined.
Lightly oil a pan and let it heat up over medium heat. Using a small ladle add a bit of the batter into the pan. Add a square of dark chocolate on top of the batter, then cover the chocolate with the pancake batter.
Cook until you see some bubbles on the pancake, flip and cook for another 2-3 minutes.
Repeat until you have used up all of the pancake batter.
Serve warm with a drizzle of agave or maple syrup, if desired, and enjoy!
