Chocolate Oatmeal Muffins

Looking for ways to change up your oatmeal?! Oats are very versatile, but you can get bored of making it the same way over and over again, so I thought I'd change it up and came up with these muffins that use blended oats as the flour in the recipe. They came out moist, fluffy and super yummy. I didn't want this recipe to just be good old oats, I wanted something that would make the muffins more interesting, so I used some cocoa powder as well as quick oats for a different textural element. These muffins are made with 5 simple ingredients, but you can add dried fruits, frozen berries or nuts like walnuts, for example, to make them even more delicious and packed with plant-based nutrients. This recipe is perfect for an on the go breakfast, because you can prepare the chocolate muffins in advance and enjoy them whenever you need a quick, ready to go breakfast that's healthy and filling.



Ingredients:

  • 1 1/2 cup rolled oats

  • 1 1/2 cup unsweetened plant-based milk of choice

  • 2 heaping tbsp unsweetened cocoa powder

  • 1/4 cup sugar

  • 7g baking powder

Instructions:

  1. Blend 1 cup of the oats into a fine flour.

  2. In a mixing bowl mix the dry ingredients (blended oats, remaining 1/2 cup of oats, cocoa powder, sugar and baking powder).

  3. Then add the the plant-based milk and mix until just combined.

  4. Evenly distribute the batter into lined muffin forms and bake for 15-20 minutes.

  5. Once they are baked, let them cool completely!
