Chunky Chocolate Granola

If you have some chocolate left from Christmas this is the perfect recipe to use it up and make something delicious and chocolatey. This chocolate granola is chunky, super crunchy and yummy. You can simply serve with plant based milk or plant based yoghurt with some fruits for a delicious and filling breakfast.




Ingredients:

  • 1 1/2 cup quick or rolled oats

  • pinch of cinnamon

  • 3 tbsp cocoa powder

  • 1/4 cup whole flax seeds

  • 1/4 cup whole chia seeds

  • 1/4 cup sesame seeds

  • handful of chopped almonds

  • 1/4 cup smooth peanut butter

  • 50g chopped dark chocolate 50% or chocolate chips

Instructions:

  1. In a mixing bowl combine every ingredient besides the dark chocolate and peanut butter. When the dry ingredients are well mixed together add in the peanut butter and either with a spatula or your clean hands mix again until the peanut butter is all incorporated.

  2. Transfer onto a lined baking sheet and spread the granola mixture into an even layer, slightly pressing down using a spatula or your clean hands. Pressing it down will ensure that you get a nice and chunky granola.

  3. Bake for 20-25 minutes, mixing the granola around halfway through.

  4. Once it's done baking, take it out of the oven and add the dark chocolate pieces on top, allowing the chocolate to nicely melt while the granola is still hot.

  5. Let it cool down and transfer into an air tight container to store for the next couple of days.



Notes:

Neutral oil or refined coconut oil works well in place of the peanut butter, in case you are allergic or if you don't like peanut butter.

You can add walnuts or other nuts and seeds along with the almonds as well.
