This easy Potato Soup is one of my favorites and that's saying a lot because I've never really been a soup person! It is super creamy, smooth cozy and hearty, and it only takes about 30 minutes to make.
Ingredients:
1 yellow onion, diced
10 medium potatoes
3 cloves of garlic, minced
400 ml veggie broth
1 tbsp neutral oil
2 tbsp italian seasoning + salt & pepper to taste*
100 ml unsweetened plant-based milk (soy or oat) or soy cooking cream
Instructions:
Peel and chop the potatoes into bite size pieces.
In a large pot, heat the oil. Once hot add the onion and saute for 5 minutes, until the onion is translucent and slightly caramelized. Add the garlic and italian seasoning, as well as salt & pepper. Cook for another 3 minutes or so.
Next add the potatoes, stir to coat in the seasoning and fill the pot with the veggie broth. Cover with a lid and bring to a boil. Cook until the potatoes are soft and fork-tender, stirring occasionally.
When the potatoes are cooked, transfer the soup into a blender, along with the unsweetened plant-based milk or cooking cream and blend until smooth. You could also use an immersion blender.
Serve warm with fresh parsley and toast, if desired, and enjoy!
Notes:
* Having access to pre-made italian seasoning is nice, but if you don't that's not a problem, because you can make your own italian seasoning blend and it is super easy! All you have to do is mix together the same amount of basil, oregano, rosemary, thyme and marjoram.
I highly recommend a squeeze of fresh lemon juice to finish off the soup to bring out the flavors even more!
