These Zucchini Fries are the perfect summer snack you can make. They're super easy to make, tasty, and full of flavor. You probably know and saw that this time of the year grocery stores are full of zucchinis but you might not know what to do with a zucchini. This recipe is an easy, low-effort way to use up those zucchinis you may have laying around.
Ingredients:
1 large zucchini
1/2 cup breadcrumbs
1/2 cup flour
1/2 cup unsweetened plant-based milk of choice
4 tbsp each smoked paprika, garlic powder, oregano
salt and pepper to tast
high heat neutral oil
Instructions:
Cut the zucchini into, roughly, 10cm long and 2 cm thick sticks. Set aside.
In a shallow mixing bowl, combine breadcrumbs and 2 tbsp each smoked paprika, garlic powder, oregano, as well as salt and pepper to taste.
In a separate shallow mixing bowl, mix together flour and the rest of the seasonings.
Pour unsweetened plant-based milk into another shallow bowl.
Coat your zucchini fries, one at a time, with the flour mixture, then dip them into the plant-based milk, and coat with the breadcrumbs. I recommend using 1 fork to dip the zucchini in the dry ingredients with and a separate one to use in the wet.
Repeat the process until all zucchini fries are battered.
Heat up some neutral oil in a pan and fry to the zucchini fries for 2-3 minutes on all sides or until golden brown and crispy.
Serve warm with your favorite dip and enjoy!
