Do you have some bananas laying around that are getting ripe and you don't know what to do with them? I have the perfect recipe for you, a yummy Vegan Banana Bread made with peanut butter. This delicious Banana Bread is very simple to make and it is perfect to use up those ripe, spotty bananas. One of the best things about this Banana Bread, besides how tasty and fluffy it is, is that you only need one bowl to make it!
Ingredients:
3 ripe bananas, make sure they're dark and spotty
2 cups flour
1/4 cup smooth peanut butter
1/2 cup white cane sugar
2 tsp / 7g baking powder
Instructions:
In a mixing bowl mash the bananas with a fork, until they are nice and smooth. Add the peanut butter and mix to combine.
Next add flour, baking powder, and sugar. Stir until the flour is all incorporated.
Transfer the batter into a parchment lined loaf pan and smooth out the top using a spatula.
Bake for 30-35 minutes, until the top is nice and golden brown and a tooth pick comes out clean. Let it cool completely before slicing!
Notes:
Any other nut butter would work with this recipe, it'll just change the taste a bit.
Optionally, add cocoa powder and or a dash of cinnamon.
