These Banana Bread Muffins can be made in just under 30 minutes so they don't require a ton of time and effort, yet they still taste delicious. These muffins are soft and moist on the inside with melted chocolatey goodness in every bite.
Ingredients:
1 ripe banana
3 tbsp neutral oil or melted vegan butter
1/1 cup unsweetened plant-based milk
1 cup flour
1/2 cup white cane sugar
2 tsp baking powder
60g vegan chocolate chips
Instructions:
In a mixing bowl, mash the banana until smooth. Add the rest of the wet ingredients (neutral oil and unsweetened plant-based milk) to the mixing bowl and mix until well combined.
Next, add the dry ingredients to the mixing bowl as well (flour, sugar, and baking powder) and mix until just about all of the flour is incorporated. This is just to prevent overmixing the muffin batter.
Fold in the vegan chocolate chips, incorporating the rest of the flour.
Divide the muffin batter between 6 lined muffin forms. Top the muffins with more vegan chocolate chips, if desired.
Bake for 15-20 minutes or until a toothpick inserted in the middle comes out clean and the top of the muffins are nice and golden brown.
Let the muffins cool down completely and enjoy!
