This Lemon and Garlic Spaghetti is full of flavor even though it is super quick and easy to make and only requires a few pantry-staple ingredients! It is the perfect light spring lunch or dinner recipe, because it is filling and healthy, yet refreshing and tasty.
Ingredients:
150g spaghetti
6 garlic cloves, thinly sliced
juice and peel of a lemon
optional: nutritional yeast or vegan parmesan, fresh parsley to top
salt & pepper to taste
3-4 tbsp olive oil
Instructions:
Fill a large pot with water, cover with a lid and bring to a boil. Once boiling, add a generous pinch of salt and cook the spaghetti to your liking or according to package instructions. Save about 1/4 cup of the cooking water! When the spaghetti is cooked, drain and rinse under cold water.
In a pan over medium heat, heat up the oil and add the thinly sliced garlic. Fry until the garlic is lightly golden, stirring frequently.
Add the cooked spaghetti, lemon juice, as well as a couple tablespoons of the cooking water you saved earlier. Season with salt and pepper. Stir and cook for 3 minutes, adding more of the pasta cooking water if needed.
Serve warm and top with the grated lemon peel, fresh parsley, and nutritional yeast or vegan parmesan, if desired.
