Savory Vegan French Toast | Bundás kenyér

Savory French toast is a very commonly eaten breakfast in Hungary. We call it bundás kenyér and the main ingredient, traditionally, is eggs. I wanted to make a vegan version of it for a while, because I stand by the fact that you don't have to miss out on foods you used to eat growing up just because you're vegan. Thanks to the chickpea flour, this Savory Vegan French Toast is high in protein! It has 22 grams of protein so it's perfect for a quick, easy, and filling breakfast.



Ingredients:

  • 1/2 cup chickpea flour

  • 1 tsp turmeric

  • salt & pepper to taste

  • 40 ml water

  • 2 slices day old bread

  • neutral high heat oil


Instructions:

  1. In a mixing bowl mix together the dry ingredients. Then add water and mix until everything is well incorporated and there are no lumps.

  2. Add a bit of oil to a frying pan and let it heat up.

  3. In the meantime, dip your bread into the batter making sure both sides are well coated.

  4. Cook the French toast for 3-5 minutes until lightly golden on both sides.

  5. Serve warm and enjoy!
