Growing up my mom made us French toast quite often, because it was cheap, filling and quick to make. It took me a while to figure out how to make vegan French toast, because although I know vegan liquid egg exists, it isn't available where I live, but I managed to do it so today I would like to share my Vegan French Toast recipe with you. The time and effort spent to perfect this recipe was well worth it, I would say, because even though I like savory breakfasts more sometimes all my heart desires is a comforting and perfectly sweet breakfast that reminds me of my childhood. This Vegan French Toast tastes just like how I remember it from when I was little, it is cozy, heart-warming and perfect to make use of some day old bread.
Ingredients:
160 ml plant-based milk (oat or soy)
3 heaping tbsp flour
2 tbsp agave or maple syrup
3 thick sliced day old bread
2-3 tbsp vegan butter
dash of cinnamon
Instructions:
In a shallow bowl, whisk together all the ingredients.
Melt the vegan butter in a pan over medium high heat. I recommend whisking the batter again at this stage as the flour can settle to the bottom of the bowl.
Dip each slice of bread in the batter, then add the bread to the pan and fry for 3 minutes on each side or until golden brown. Repeat with each slice of bread, adding more butter to the pan in between as needed.
Serve warm with fresh fruit, powdered sugar or more agave.
