Pumpkin Baked Oats | Vegan

These Pumpkin Baked Oats taste like you're eating dessert for breakfast. I love oats because they're so versatile, you can always change up the flavors. Oats are a great choice for breakfast because they keep you full for a longer period of time, plus they're delicious. Especially these Pumpkin Oats, such a classic of the season, cozy, and made with warm fall spices.




Ingredients:

  • 3 tbsp pumpkin puree

  • 5 g baking powder

  • 1/3 cup oats

  • 2/3 cup unsweetened plant-based milk

  • 2-3 tbsp agave or maple syrup

  • 1-2 tbsp pumpkin spice


Instructions:

  1. In a small mixing bowl mix together oats, pumpkin spice, and baking powder. Next add unsweetened plant-based milk, agave or maple syrup, and pumpkin puree. Mix until well combined.

  2. Pour the oat mixture into 2 ramekins, filling them up halfway. You don't want to overfill the ramekins as they rise a quite a bit in the oven so they would overflow.

  3. Bake for 15-20 minutes. If the center still seems a bit wet, that's okay. The oats will continue to set once they're out of the oven.

  4. Serve warm, top with fresh fruit and enjoy!
