Chocolate and Coffee Baked Oats

These Baked Oats quickly became a favorite and for good reason! This recipe is easy and quick to make, and it only requires a few simple ingredients that you probably already have at home, but these Chocolate and Coffee Baked Oats aren't your usual baked oats. I love to make these Baked Oats for breakfast on days when I know I'll be busy and I'll need the extra caffeine!




Ingredients:

  • 1 cup rolled oats

  • 2 tsp baking powder

  • pinch of cinnamon

  • 1 ripe banana

  • 75 ml unsweetened plant-based milk of your choice

  • 1 shot of freshly brewed espresso

  • 1/2 cup white cane sugar*

  • 4 squares of 50% dark chocolate

Instructions:

  1. Add every ingredient, besides the chocolate, to a blender and blend until smooth.

  2. Lightly grease 4 ramekins with vegan butter and pour about 2-3 tablespoons of the batter into the bottom of each ramekin. Place 1 piece of chocolate in the middle and evenly fill the ramekins with the rest of the batter, covering the chocolate and filling the ramekins about 3/4 way full.

  3. Bake for 10-15 minutes.

  4. Serve while still warm and enjoy!



Notes:

* Depending on how ripe your banana is you can use more or less sugar. Generally the riper the banana, the more naturally sweet it is.
