Lava Cake Baked Oats

These baked oats are not your regular boring oats! They are rich, decadent, filling and fun to eat, with melted chocolate pudding in every bite! These Lava Cake Baked Oats are not only a good breakfast choice, but they are perfect as a dessert too!



Ingredients:

  • 1 cup quick or rolled oats

  • 2 tsp baking powder

  • 2 tbsp coca powder

  • pinch of salt

  • Alpro chocolate pudding*

  • 3 tbsp maple syrup or agave

  • 125 ml unsweetened plant-based milk of your choice


Instructions:

  1. Add all your dry ingredients to a blender and blend until the oats form a flour-like consistency.

  2. Next add the wet ingredients (plant-based milk and maple syrup or agave) to the blender as well and blend until everything is smooth and well combined.

  3. Lightly grease 2 ramekins and scoop about 2-3 tbsp of the batter into the bottom of both ramekins. Scoop 3 tbsp of the Alpro chocolate pudding into the middle of each ramekin and cover with more batter, filling the ramekins about 3/4 way full.

  4. Bake for 10 minutes. Serve warm and enjoy!



Notes:

*If you don't have access to Alpro's vegan chocolate pudding, you can use any other brand of vegan chocolate pudding or just simply use some dark chocolate.
