Apple Pie Pancakes | Dairy and Egg Free

These pancakes are made without dairy and eggs but they're just as delicious and so fluffy. Served with the apples, the pancakes make for a tasty, cozy, and filling breakfast. The apples are cooked in vegan butter and brown sugar which makes them slightly caramelized and soft. Seriously, these Apple Pie Pancakes are everything you need on a cold fall morning!



Ingredients:

  • 1 cup flour

  • 4 tbsp white sugar

  • 2 tsp baking soda

  • 2 tbsp cinnamon

  • 2/4 cup unsweetened plant-based milk

  • 2 granny smith apples, small cubes

  • 2 heaping tbsp brown sugar

  • 2 tbsp vegan butter


Instructions:

  1. In a mixing bowl, combine flour, sugar, cinnamon, and baking powder. Then add plant-based milk and mix until well combined.

  2. Lightly oil a pan and let it heat up over medium heat. Using a small ladle, add a bit of the batter into the pan. When bubbles form on top, flip the pancake. Repeat until you have used up all the pancake batter.

  3. Melt vegan butter in a pan. Once melted, add the apples and brown sugar. Cook for a few minutes to caramelize the apples, stirring frequently.

  4. Top the pancakes with the cooked apples, and enjoy!
