Thai Inspired Noodles With Peanut Sauce

This peanut butter noodle dish is super creamy, filling, healthy, and delicious. If you are looking for a quick and easy weeknight dinner idea, this is the perfect recipe for you! It might sound fancy as you might not think of using peanut butter in a savory dish, but the lemon juice and other ingredients in the sauce make for a yummy, balanced, yet very simple meal. Share this recipe with your friends and family and they will think that you put a lot of effort into it, but in reality, it only takes 30 minutes to prepare.



Ingredients:

  • 1/4 cup smooth peanut butter

  • 1 tbsp fresh grated ginger

  • 2-3 cloves minced garlic

  • 2-3 tbsp soy sauce

  • 1 tbsp agave or maple syrup

  • 2 tsp sriracha, optional

  • juice of half a lemon

  • handful of chopped peanuts

  • 1 red bell pepper, julienned

  • 2 medium size carrots, julienned

  • 50g spaghetti


Instructions:

  1. Fill a large pot with water, cover with a lid and let is come to a boil.

  2. Once boiling, add a generous pinch of salt and cook the spaghetti until al dente. Drain the cooked spaghetti and set aside, but make sure to save some of the cooking water.

  3. In a small bowl, mix together peanut butter, grated ginger, minced garlic, soy sauce, lemon juice, and half of the chopped peanuts.

  4. In a pan, cook the bell peppers and carrots for 2-3 minutes so they soften a bit.

  5. Add the cooked spaghetti to the same pan, along with the peanut sauce and a couple tablespoons of the pasta water. Stir to coat the spaghetti in the peanut sauce and cook until everything is heated through.

  6. Serve warm, topped with the remaining chopped peanuts, and enjoy!
