Eggs are a big part of most people's breakfasts, but you don't need to participate in supporting that cruel industry. You might not know what to eat for breakfast after you go vegan, don't worry I'm here to help you out. This recipe is made with using homemade chickpea flour, but of course you can also make it with store-bought chickpea flour. Making your own chickpea flour may sound intimidating at first, but trust me it is so easy to make plus it is also more environmentally friendly as you can buy dry chickpeas in bulk and use them for various different recipes, leaving behind less or very minimal waste.
This vegan omelet is healthy, filling and delicious. You can put in it a sandwich or just eat in on it's own for breakfast. I like to make this vegan chickpea flour omelet on days when I don't have that much time in the morning to prepare breakfast as it is quick to make and full of plant based protein which will help keep me full until lunch.
Ingredients:
135g dry chickpeas
2 tbsp all purpose flour
2tsp each: garlic powder, cumin, turmeric, smoked paprika
salt & pepper to taste
1 tbsp nutritional yeast
100 ml water
1-2 tbsp grated vegan cheese
Instructions:
To make the chickpea flour just blend the dry chickpeas in a high power blender until a flour-like texture forms. Sift the chickpea flour through a fine mesh strainer to get rid of the bigger pieces. Blend what's left in the strainer again so you use up everything.
In a mixing bowl combine all the dry ingredients including 1/4 cup of the chickpea flour you just made.
Then add the water and mix using a whisk. The batter should be similar to a pancake batter consistency, a few lumps are okay.
Lightly oil a pan and let it heat up over medium heat.
Pour in the the omelet batter and move it the pan around kind of in a circular motion so the batter spreads out in an even layer.
Sprinkle the vegan cheese on top and cook for 2-3 minutes, until the omelet is cooked about halfway.
Fold it in half, using a spatula, and cook for an additional 2 minutes on each side so the cheese melts.
Serve warm and enjoy!
Notes:
I wanted to keep this recipe simple, but you can use some thinly sliced mushrooms and spinach too, if you'd like to get some more veggies in. I would suggest you place the mushrooms and spinach on top of the omelet before adding the cheese.
