Blueberry Crumble Bars

I love using seasonal, fresh fruit in baked goods and this Blueberry Crumble recipe is perfect for turning berries into something even better. The blueberries turn into a jam-like consistency and they go perfectly with the buttery, oatmeal crumble topping. The recipe is super easy to make, using ingredients you may already have at home. This recipe is also very versatile, you can use blackberries, raspberries or pretty much any of your favorite berries instead of blueberries. Make these Blueberry Crumble Bars for your friends and family, take it to a cookout and I guarantee everyone will be impressed.




Ingredients:

crumble topping:

  • 1 cup rolled oats

  • 1 cup all purpose flour

  • 1 tsp cinnamon, optional but recommended

  • 2 tsp / 7g baking powder

  • 50g brown sugar

  • 100g cold vegan butter, cubed

filling:

  • 480g fresh blueberries

  • 4-5 tbsp brown sugar

  • juice of half a lemon

  • 1 tbsp all purpose flour


Instructions:

  1. In a 20x20 or 20x30 cm baking dish, combine fresh blueberries with brown sugar, flour, and lemon juice. You could do this step in a mixing bowl and then transfer the mixture into the baking dish, but doing in straight in the baking dish means less dishes to wash.

  2. To make the crumble topping, mix together oats, flour, cinnamon, brown sugar, and baking powder. Then add cold vegan butter cubes. Incorporate the vegan butter, using a fork or a pastry cutter. You should get a sand-like, crumbly texture with no big butter chunks.

  3. Spread out the crumble mixture on top of the blueberries into a somewhat even layer.

  4. Bake for 25-30 minutes or until the top is golden brown and the blueberries are bubbling.

  5. Let it cool down to at least room temperature before slicing.



Notes:

Store leftovers in an airtight container in the fridge for up to a week.
