Creamy Chia Pudding

This Creamy Chia Pudding is not only vibrant, it is also healthy and loaded with all the omega 3s you need! It is the perfect breakfast, snack or dessert you can prepare in advance and grab whenever you need it. It's amazing how 5 simple ingredients can result in a thick, creamy, nutritious, and yummy chia pudding!


Chia seeds are good for you, not only because of the omega 3s which can be found in them, but also because chia seeds are rich in fiber, antioxidants, calcium and magnesium!




Ingredients:

  • 50g plain unsweetened soy yoghurt

  • 1/4 cup chia seeds

  • 1/2 cup frozen mixed berries

  • 150ml unsweetened plant-based milk

  • 4 tbsp agave or maple syrup

Instructions:

  1. To a blender, add the plain soy yoghurt, frozen berries, agave and unsweetened plant-based milk. Blend until smooth.

  2. Transfer it into a mixing bowl add the chia seeds and mix until well combined. Cover with a lid or plate and place it in the fridge overnight. The chia seeds will soak up the liquid and you'll get a thick and creamy chia pudding.

  3. Take it out of the fridge the next morning and divide the chia pudding between 2 glass jars.

  4. Top with fresh fruit or more yoghurt, if desired and enjoy!



Notes:

You can store the chia pudding in the fridge for up to 5 days!
