If you are busy and you don't want to spend more than 20 minutes in the kitchen preparing food, then these Granola Bars are perfect for you! They are not only super easy to make, they are nutritionally balanced, healthy and super delicious as well! The recipe only requires minimal effort, time and 4 basic ingredients that you most likely already have at home. I love to make a batch of these Granola Bars in advance and keep them in the fridge so I always have a quick and delicious snack or breakfast option.
Ingredients:
1/3 cup smooth runny peanut butter*
4 tbsp agave or maple syrup
1 cup rolled oats
2 tbsp each hemp seeds, flax seeds, chia seeds
handful of chopped 50% dark chocolate or chocolate chips, optional
Instructions:
In a mixing bowl, mix together the wet ingredients (peanut butter and agave). Then add the dry ingredients and mix again, using a spatula, until everything is well combined. If using, you can also add the chopped dark chocolate at this stage.
Transfer the granola bar mixture into a parchment lined baking dish, like a brownie pan, or a container. Using the back of a spatula or spoon spread the mixture out and press it down into and even layer.
Place it in the fridge or freezer for at least 15-20 minutes to set, before slicing the granola bar.
Notes:
*Any other nut or seed butter should work in place of the peanut butter. However, depending on the quality of the nut or seed butter you're using, you might want to adjust the quantity.
Optionally, you can also add some dried fruits and chopped nuts, like peanuts or walnuts to these granola bars.
