In Europe pumpkin isn't that celebrated as it is in the US, it's not really used in sweet desserts. Growing up, I remember, we used to just slice it up, roast it and eat it as a savory dish or a side. You can't find canned pumpkin puree over here in Europe, so I thought why not make my own. Making your own pumpkin puree is easier than you'd think! You only need one ingredient, pumpkin. The orange pumpkin is the best for this recipe, since it is slightly sweet and turns super soft when roasting, so it is perfect for desserts. Ingredients:
1 pumpkin
Instructions:
Cut the top off the pumpkin, then cut it in half. Remove the seeds. Depending on the size of your pumpkin, cut both halves in half again.
Place the pumpkin on a baking sheet and roast for 35-40 minutes.
Let the roasted pumpkin cool down before adding it to a food processor or a blender. Blend until smooth.
Store in the fridge in an airtight, sealed container.
