Homemade Vegan Pizza | Take-out Meals At Home

Pizzas are one of my absolute favorite comfort foods. Fun fact, when I was in university I used to make pizzas at least 3 times a week. Pizzas are not only one of the cheapest foods you can make, they're also great to use up any veggies hiding in the back of your fridge! You only need 5 simple, pantry-staple ingredients for the base of this pizza and you'll have a delicious, fully dough! The most time consuming part of this recipe is having to wait for the dough to rise, the rest comes together in no time.




Ingredients:

dough:

  • 240g bread flour + more to knead

  • 7g / 2 tsp fast-action dry yeast

  • pinch of salt

  • 180 ml lukewarm water

  • 20ml neutral oil

toppings:

  • 4 brown cremini mushrooms, thinly sliced

  • 150g vegan cheese, grated *


  • handful of baby spinach

  • 100g tomato sauce

  • 1 tbsp oregano


Instructions:

  1. In a large mixing bowl, add flour, yeast, and pinch of salt. Mix until well combined.

  2. Next add oil and water, mix again until a rough dough forms.

  3. Place the dough on a lightly floured, clean work surface and knead it until smooth and not sticky.

  4. Place the kneaded dough into a lightly oiled mixing bowl and let it rest for 30 minutes to 1 hour or until doubled in size.

  5. In the meantime, combine the tomato sauce with the oregano in a small mixing bowl.

  6. Once the dough has risen, roll it out into a 27 cm diameter circle. It doesn't have to be a perfect circle!

  7. Carefully transfer your dough onto a parchment lined baking sheet and arrange the topics on top.

  8. Start with the tomato sauce, followed by mushrooms, baby spinach, and vegan cheese.

  9. Bake for 15-20 minutes.

  10. Serve warm and enjoy!



Notes:

* The vegan cheese is optional, but recommended. If you don't have access to it, don't worry.


What if I don't have mushrooms or spinach? You can use any other toppings you'd like! Great way to clean out your fridge and use up any veggies you have on hand.
