Barackos Gombóc |Hungarian Peach Dumplings

This a traditional Hungarian dish that my grandma used to make for us all the time when we were little. The dumplings are pretty simple and easy to make and you can also get your loved ones involved in the process. The dough uses potatoes, flour, and, in this case, vegan butter. It is similar to a gnocchi dough but much softer. This recipe has been passed onto me from my grandma as well as my mom, it's a special one.


Ingredients:

  • 3-4 potatoes, peeled

  • 3 tbsp vegan butter/margarine

  • 230g flour + more as needed

  • pinch of salt

  • 17 apricots, remove the pit and cut in half

  • 1/2 cup breadcrumbs

  • 2-3 tbps white sugar + more to taste



Instructions:

  1. Fill a large pot with water, add the potatoes and cook until fork-tender.

  2. Once the potatoes are cooked, drain and transfer into a large mixing bowl.

  3. Mash the potatoes, using either a potato masher or a fork.

  4. Next, add vegan butter or margarine, flour, and salt.

  5. Using your clean hands, knead until a soft and not sticky dough forms.

  6. Lightly flour your clean work surface and roll out the dough. It should roughly be 30cm long.

  7. Cut the dough into 17 even size squares and place half an apricot on top of each square of dough.

  8. Take one piece of dough and fold the edges in towards the center. Then roll it in between your palms to form a ball. It doesn't have to be perfect!

  9. Repeat until you have used up all of the dough.

  10. Fill a large pot with water and let it come to a boil.

  11. In the meantime, add the breadcrumbs to a pan and toast over low heat until golden brown, stirring continuously.

  12. Take it off the heat and continue stirring while adding in the sugar.

  13. Once the water is boiling, carefully place a few dumplings in the pot, using a slotted spoon. Cook for 5-10 minutes.

  14. Using the same slotted spoon, remove the dumplings from the pot letting any excess water drip off before transferring them to the pan with the toasted breadcrumbs. Coat the dumplings in the breadcrumb mixture.

  15. Repeat the same process until you've cooked all of the dumplings.

  16. Serve warm with extra sugar or some sour cream and enjoy!



Notes:

What other fruits can I use? Traditionally, these dumplings are either made with apricots or plums.
