Sour Cherry Summer Soup

This Sour Cherry Soup recipe is one of my favorites, I grew up eating it so it has a special place in my heart. I thought, because summer is getting closer and the weather is starting to warm up, what better time to share the recipe than now. I know using cherries in a soup might sound weird, any fruit for that matter, but trust me it is amazing. The secret ingredient that takes this soup to the next level is, drumroll please, vanilla pudding. It not only helps to thicken the soup but also adds some delicious flavor. The soup is served cold so it is perfect on hot summer days!



Ingredients:

  • 350g frozen pitted cherries

  • 3 tbsp store-bought vanilla pudding powder

  • 1 tsp cinnamon

  • 3 tbsp sugar + more to taste

  • 3 tbsp unsweetened plant-based milk


Instructions:

  1. To a large pot add the cherries and cover with double the amount of water. Bring to a boil.

  2. In the meantime, mix together the vanilla pudding powder, cinnamon, and sugar in a mixing bowl.

  3. Heat up the plant-based milk, then add it to the mixing bowl with your pudding mixture, mix until smooth and there are no lumps.

  4. Once the soup is boiling , add 1-2 tbsp of sugar, depending on how sweet your cherries are.

  5. Pour the vanilla pudding in the pot, mix and let it come to a boil again.

  6. Cook for an additional 1-2 minutes and let it cool down completely before serving.



Notes:

Store leftovers in the fridge for a couple of days.
