Quick and Easy Caramelized Peach Oatmeal

When I first went vegan I ate oatmeal every single day for breakfast. Oatmeal will always be one of my favorite things to make, but as you can imagine I got bored of it eventually. Along the many health benefits oats have, they are great because they release energy in your body slowly so it can keep you full for a longer period time. Oats are also very versatile, there are lots of different ways you can prepare them and same with the toppings you can use. Overnight oats, for example is a way you can prepare them if you are a busy person who doesn't have much time in the morning to make a healthy and satiating breakfast.




Ingredients:

  • 1 medium ripe banana, mashed

  • 1 cup of quick or rolled oats

  • 2 cups of unsweetened plant-based milk of your choice

  • 1 nectarine, sliced

  • 4 tbsp vegan butter

  • 3 tbsp brown sugar

  • 2 tsp cinnamon, optional


Instructions:

  1. First, mash the banana with a fork in a mixing bowl. This is going to naturally sweeten your oatmeal. The riper your banana, the sweeter the oatmeal going to be.

  2. Add the mashed banana, oats, plant-based milk, and cinnamon (if using), into a saucepan. Cook for about 3-5 minutes or until the oatmeal has thickened to your liking, stirring occasionally. Remember it'll still thicken a bit after you've removed it from the heat.

  3. Meanwhile, melt your vegan butter and sugar in a pan. Once the butter and sugar mixture is melted, place the nectarine slices into the pan. Cook for 3-5 minutes on each side or until nice and caramelized on both sides.

  4. Top the oatmeal with the caramelized peaches.
