Overnight Oats | Dairy Free

These Overnight Oats are super creamy, tasty, and great for meal prep. The recipe is easy to make, using pantry-staple ingredients. If you're looking for a delicious, cold, summer breakfast, this is the perfect recipe for you because these oats are versatile so feel free to change it up.



Ingredients:

  • 1 cup quick oats*

  • 2 tbsp chia seeds

  • 1 tsp cinnamon, optional

  • 160g plain unsweetened vegan yogurt*

  • 1 cup unsweetened plant-based milk of choice

  • 3 tbsp agave or maple syrup


Instructions:

  1. In a mixing bowl first mix together the dry ingredients, oats, chia seeds, and cinnamon if using.

  2. Then add vegan yogurt, plant-based milk, and agave. Mix to combine.

  3. Divide the mixture between 2 mason jars and place in the fridge overnight or for at least 2 hours.

  4. When you're ready to serve, top with fresh fruit like apples or nectarines and enjoy!



Notes:

* I prefer the texture of quick oats, but you can use rolled or any other type of oats too.


* For a creamier end result, I recommend using a Greek-style plant-based yogurt. I used an oat based one which is pretty thick and creamy.
